Q: Would like to buy but am concerned about shipping during summer. The majority of items arrive warm to the touch. Suggestions?

We ship the product 2 day priority mail and our cutoff day is Wednesday so that it's not stuck over the weekend. We've done this over 3 years so we do have experience with high temperatures during summer. As long as you are able to get the product on the day of delivery and put in the fridge it should not be any issue. The product won't go bad, the concern is if it's out too long the cultures wake up and continue fermenting, which can lead to a more vinegar/acid taste. But we've not really seen this issue, only if the product gets lost or left at a PO Box for many days, etc.

Q: How many grams of beets per jar (minus the water)? (if you can't weigh beets without water, please don't answer :)

there's no excess water/brine in the jar. The beets are moist yet crunchy, so the weight would be what is labeled on the jar, 16 oz.

Q: Will be product spoil if kept at room temperature till exp date? I don't care about taste.

This is the answer directly from the vendor who makes the product: These are not canned, they are raw and so they will likely keep fermenting above 45 degrees. Fermented foods don't really spoil, they just keep fermenting and then when they are too old they kind of dry out. However, they will not be harmful to your health if left to ferment in the jar. Eventually the lid will get swollen and leak.

Q: What do the jars get padded with to avoid breaking in transit?

Bubble wrap 100% around each jar, and then placed inside a cardboard box with little room to move during transit.
