Would there be a reason why this would not work horizontally?

Nope you can mount it however you want when you pull the screen out it locks to the pole and stays until you retract it

If it’s defective you can return it free. If you don’t like it you pay to send it back for a refund. It’s a vert nice awning.

Would this work as an outdoor projector screen?

Probably but it’s the wrong color. Your picture would looks washed out.
