The sizing says 8.5 M. Does that mean these are men’s sizes?

No, these are women’s sizes. The “M” is medium for width.

I wear 8.5 in Nike but I needed up needing a 7.5 in a pair of adidas sneakers should I order these 7.5?

I usually wear 8.5 in most shoes. In Nikes and running shoes I wear 9 or 9.5. I tried these in 8.5, 9 and 9.5. I kept the 9.5. They are roomy and super comfortable. The others were too tight for me.

Do these shoes have arch support

No, not really but they are comfortable

Do they have a lot of cushioning?

Maybe they forgot the foamy and soft comfort and cushion in mine???? I usually wear nike and found these to be flatter, felt like I was wearing a weightlifting shoe. They are comfortable nonetheless
