Good Morning. Both Gelpans are milk based with the mixing ratios right on the package. Cold 50 has more stabilizers and emulsifiers than Cold 100. If you would like a water based please use Gelmix (ASIN B013XBJE7M).

Once mixed and cooled, can this be put into a home compressor ice cream maker? Thank you.

I use it my home gelato machine that has a compressor, with the given ratio or somewhat proportionately less.
