Great book
Great book. My son actually wanted this to try some recipes. It didn’t have one he watched him make so a bit disappointed but he tried another recipe from this book. I was proud that he was interested in cooking and I was familiar with this author from watching his videos.

The most amazing cookbook I have ever had the privilege to own. Just wow! He didn’t miss anything. I will be handing these out for Christmas! A definite keepsake.

What once might have been considered the quintessential American cookbook now embraces an eclectic blend of global influences, revealing a culinary landscape that is as diverse as the nation itself. Or it could just be Joshua Weissman.When I picked up what I believed to be a standard American cookbook, all because my 7-year old begged me to buy this cookbook by Weissman and Nick Digiovanni's, I was taken aback by the variety of recipes within its pages. From French and Italian classics, which have long been considered the gold standard of American culinary education, to the surprising inclusion of Asian and South American dishes, this collection feels less like a snapshot of one country’s food traditions and more like a reflection of a world increasingly interwoven.As a culinary student, all we learned in the lab was Escoffier, the French master chef, and James Beard, the father of American cuisine. Heck I thought that's all Americans ate - French and Italian food. It was a world of roasts, pies, sandwiches, and the occasional salad—foods that are as entrenched in American identity as they are in culinary tradition. In this environment, ramen was nowhere to be found, nor were any other Asian staples. I am Korean American, so it's not a surprise to me that Americans wouldn't know Asian food except in the big cities like Los Angeles and New York.This book is not an international cookbook, nor does it attempt to be. But it is unmistakably a reflection of the changing tastes of modern America. Perhaps it is the author’s acknowledgment of the increasingly diverse tastes of his audience—many of whom likely tune in to his YouTube channel—that led him to embrace such an array of global recipes.Or it could just be Joshua Weissman.What we consider to be American today is, in many ways, a mosaic of influences, and Weissman touches on that in his cookbook. His recipes not only show many different tastes, but a focus on what makes the food taste good.In 2024, the question is no longer “What is American?” but rather, “What isn’t?”

"From scratch" to Essential cooking.
I use this book darn near Every Single Day. Bought his second book too. Jaw dropping how helpful these recipes are. I pickle now! and would rather make dinner rolls then go buy some because the recipe is so easy, and tastes sooooo much better. There's a recipe for Pho, ramen, Katsu, Chashu pork!! if you are looking for harder difficulty cooking. Or if you want to go to the absolute ground level of cooking, he goes through how to make broths, butters, and sauces. Like ketchup, mayo, and/or bbq.

Love this recipe book, it's very thorough with the instructions, and the recipes turn out amazing! I've cooked 3 things from this book so far and my family has really enjoyed it! Can't wait to see what more this cookbook has to offer!

Great cookbook for gift giving or for everyday meal planning.
Josh Weissman is one of my absolute favorite chefs, right there next to Gordon Ramsey. Now that's high praise! This cook book is amazing. I love that his recipes take the mystery out of things like making butter, making certain cheeses, jam, pickles etc. These curated recipes are for the everyday home cook and the aspiring chef. Anyone who is disappointed by the fact that there's some "simple" recipes is missing the fact that food is a creative science. For example having the perfect soft boiled egg is going to make or break the finish to your ramen or fried rice. I think Weissmans cookbook is hilarious, educational and a fun culinary ride. It is worthy of being a gift or even a staple in your every day meal planning. Josh you're awesome thank you! Please keep making cookbooks like this!
