Q: Is there any information listed on sodium (salt) level for the sauce? looking for a lower sodium sauce.

I also watch my sodium intake, which is why I prefer a few items from the Melinda's catalog. It's definitely not that bad compared to some other sauces out there. I took a photo of the label for you but it's not letting me upload it for some reason. This sauce is 110mg per Tablespoon (5mL) serving. And with the potency of the flavor and heat profile, I don't often need more than a serving when using the sauce - often less. It definitely tastes a lot saltier than it actually is, just a heads-up. But I highly recommend the sauce, it's so good on so many things.

Q: Did they stop making this in one star heat level?

Not sure on your question as I first bought Melinda's a few months ago. I do know that with their differrent flavors, you can buy Black Truffle which has a low heat level and is delish. Or their hotter varieties depending on what you are prepping. The Black Truffle has an excellent flavor that i use on air fried chicken wings if the dry rub is hot. Adds a wonderful flavor after wings are done. Put the wings in a bowl, add a little Black Truffle and toss. Since the wing dry is already hot, Black Truffle adds some more heat but more flavor than just heat.
