Having read about other fireproof chests - some say you must open chest at least once a week to avoid moisture build up - is this the case with this?

This can happen and you can actually get mold. The best thing to do is buy some silica packets and place them inside the safe/box. They're cheap and you can also get them on amazon, I believe.

Would an iPad Pro fit in this?

I bought this safe, but I wanted it to place A4 paper (such as deeds for house etc.) Wasn't large enough to place them in flat (if this is any help) I am not sure the size of your iPad but maybe give you an idea. Heavier than I imagined - decided to donate to charity shop!

Does this offer protection against water? Parts of the description say it does and parts say it doesn’t.

Having research a number of similar boxes for document storage, I went for this one as it stated clearly in the literature and on the box it came in that it is water proof also fire proof up to 30 minutes and being portable if there was a fire keep it accessible to take with you Hope that answers the question

Safe arrived with no key

It should have TWO keys included. Suggest you contact seller and inform them it is minus keys. They have obviously been mislaid.
