Q: Is this product unrefined?

Yes, it's refined and processed in several stages. Its nutritional value is similar to brown sugar and should be treated as sugar. This is not a health sweetener. It is sugar derived of coconut nectar, and not much different than regular sugar, which can be derived of many different sources. If you want a a healthy option, try date sugar, which is just dried dates gronded into a powder. It is a whole food and the sugar is still kept within the fiber naturally.

coconut sugar has a lower glycemic index (35) than white sugar (60 to 65), meaning it doesn't spike your blood glucose and insulin like table sugar does.

Q: Does this taste of cocount? I use stevia at the moment - how does this compare? Sounds very interesting

No, absolutely no coconut flavour. It has a slight caramel flavour and personally I use for it in all drinks and food except tea. As for the comparison with stevia, I never liked stevia no matter how little I used it was way too sweet and left an after taste at the back of my throat, this is far superior.
