Heavenly White Lily, the Secret Of Southern Cooks & Serious Bakers
PLEASE NOTE: I wrote the review below about the White Lily Flour I've used for DECADES to bake myself into near-legend status. HOWEVER----when I opened the bags to begin my Christmas baking, I found the flour was condensed into HARD CRUNCHY LUMPS that would not even sieve!!! I had to put it in the food processor to make it fine enough to work with. I went ahead & baked with it anyway because time is very short & my baked goods are gifts which must be frozen/then shipped. (White Lily isn't sold in the NE where I live, so I must order it).To my anger & shock, my Biscuits, which I've been baking with White Lily for close to 20 years, came out like BRICKS< hardly rose at ALL ( see the photos for comparison---close ups are my USUAL White Lily Biscuits--the ones in the pan are from this stale flour. After checking & re-checking everything to make sure I hadn't made some fatal error, THEN I noticed the d*mn expiration date on the flour: MARCH 2019!!! I bought the flour in NOVEMBER 2019!! I've never worried to check the expiration date on White Lily in all the years I've been using it, so this was a nasty freakin shock. It's absolutely NOT the company that mills White Lily but the avaricious Seller who bought it & stockpiled it & didn't mind selling past expiration date FOOD on Amazon!!! I'm so mad I'm grinding my teeth. Basically I've got 4 dozen hockey pucks here, nothing nobody could call a Biscuit. :( There's no way now, that I have time to get more flour & bake more Biscuits & Cookies, freeze them & ship them. DO NOT--DO NOT-- BUY THIS FLOUR FROM THIS SELLER!!!The OLD Review, that I wrote prior to opening these bags of EXPIRED STALE FLOUR (---because it's unfair to White Lily for one greedy, carelessAmazon seller to give this extraordinary flour a bad name):Southern cooks like myself have been pretty much raised on White Lily, but in the Northeast where I live, it isn't sold so I have to Amazon it. Either all-purpose OR Self-Rising versions are absolutely phenomenal for baking. I prefer the Self-Rising for my 'Best Damn Biscuits Ever', which I sell online to select clients and of course, make for my family & friends. White Lily is made from a soft winter wheat whose low protein & low gluten structure is very different than most flours you buy in a grocery store. It performs constantly to produce light-as-air baked goods. It is my absolute Gold Standard --and while I use many types of flour, this one is my icon for baking. You just almost can't mess up with it. I've used sweet butter, lard, just heavy cream & the flour and all come out tender,cotton-candy light, big rise and amazing. Fun Story: I have a friend in another state who sends me 20 lbs of this flour each year ( which I bake up quickly!) just so I can make her biscuits when she visits. :) White Lily has helped make me something of a legend in my family & friends & a few select clients ( I won't use anything else for Biscuits & Butter Dips) , so when I finally get around to writing that cookbook, THIS flour will have a starring role in it. Try it! I promise you raptures of baking with effusive praise & adulation. :)

beautiful rise and excellent texture
we have been making biscuits with this flour and the results are wonderful. with the self-rising flour we don't even need to add baking powder. I like to keep the dough on the dry side so the biscuits come out flakier, but my friend from Arkansas likes to use extra milk so they can be split more cleanly and served with white gravy.the flavor is good and the item was well packaged, fresh, and exactly as described. thanks e-commerce for letting me get exotic flours that are hard to find where I live.

Excellently packaged.
I came across the knowledge of White Lily Flour by reading reviews. I tried it and fell in love with it. ♥️ The flour is so light and silky smooth feeling.I've always battled with making homemade biscuits, but I've found a super easy recipe that perfected how I wanted it and EVERYONE loves it!!! Two cups of flour and two cups of heavy cream. How simple!!! You can blend in cold cubed butter and it brings it to the top.🤷 What else can I say 🤔 it's way too overpriced, but hard to find around me so I have to sacrifice for it to get the best flour I've ever come across.I've bought the bleach kind but am learning about the unbleached kind which is better, less chemical but does it still work and taste the same?I'm going to be making all kinds of dishes now. 👩🍳

Best Light Flour
I wish the local supermarkets would carry this. This is a delicate light flour and makes the most delicate fluffy biscuits. One of my recipes suggested this flour and I couldn’t find it anywhere and was sold out on their website. Thank you Amazon.

great product, wish it cost less.
I have always loved white lilly products. You cannot get them here where I live, I absolutely never have the same quality of biscuit as I do when using this flour. . But, it is just way too expensive to order online. Plus, I am wanting to totally rid myself of white milled grain products, and will no longer be eating anything but whole grains, so will not be re-ordering. However, I have to say, in my opinion,white Lilly is the absolute best, and your baked goods, esp. biscuits with this product will be the best you ever made. But, at over five dollar a bag once it is shipped, no matter which seller I priced it at, even at white Lilly site by the time you add on the shipping it comes to same amount. I know it is 5# shipping. I ordered three bags, seems like that would get the rates down some. just too epensive for me.
