how thick is the blade?

The blade is approximately 1/16th of an inch I would guess without measuring. The blade is stiff and rigid, not in any way flexible. Good for cutting dough, and for scraping a smooth hard surface, but not useful for cleaning dough out of a curved vessel or bowl.

Does the one with the wooden handle need to be routinely treated with mineral oil to keep from cracking?

No, it doesn't need to be treated with any oil. I put it on the dishwasher or wash it by hand and l let it dry. I'm very satified with my purchase. Hopefuly this help ;)

Confusing listing. Are there 2 or 3 blades?

Single blade per scraper. I use it for cutting dough or cleaning counter!
