Would these be kosher?

Every one of you making jokes misunderstood his question. Jewish dietary laws state that it's forbidden to cook food with anything (i.e. wood chips, briquets) that had been soaked with non-kosher wine. Even though the wine itself doesn't "touch" the food. Now, not all liquor is kosher. And you're cooking food with wood that has absorbed liquor. So it's a legitimate question. And to answer it, Jack Daniels has been certified kosher since 2014, by an organization that inspects the JD facilities. So it's acceptable to cook with wood chips that absorbed JD, just not ones that have ever been used in storing non-kosher wine.

Can you use these to flavor everclear?

Char them a little and yes you can. Let the chips soak for a few days and filter the chips out amd youre golden

Con you use it to brewing? I want barrell age flavor in my craft beer.

These are quite commonly used to simulate barrel aged brew. I'm considering them for my first foray into that. I'm also reading that the cubes made for the purpose provide more accurate control due to the known surface area. Did you try it? If so, how'd they work?
