What is the "use before" date for these?

You can find the use before date stamped just below the top seal paper. I just bought some and the date says use bdfore Jan. 2019. It last for a long time. I use it every day foar my cat to keep his electrolytes even. Recommed by my vet.

The unflavored one I just received (April 2017) has expiration date of Oct. 2018.

Why do the instructions say, 'after opening, use within 48 hours'?

Pedialyte needs to be used within 48 hours or it loses its efficacy. You can however freeze the portion you don’t use into smaller containers and take them out as needed at a later date. Otherwise once you open it, it must be used within 48 hours to obtain its benefits per the manufacturer
