IBILI 824703 Square Egg Mould Moka

Japanese breakfast Chef's use a square double, two squares side by side, to make their eggs sandwiches. So I searched and searched and searched and this was the closest thing I could find online. It's not nearly the same quality as they use in Japan, but it works for a single morning sandwich in a non commercial kitchen. How to use it: Spray it with Pam non-stick spray, heat the pan, then place the square egg mould moka on to warm up, then crack the eggs on the grill plate and add them to the egg mould moka. Once the egg bottoms have seared, turn the heat down to medium. The eggs will cook half way through without burning. Remove the egg mould moka and with a spatula flip the square eggs over if you'l like to cook them through. You're done! Let the square egg mold cool and hand wash after each use. Respray with Pam. The good: It works and holds two large eggs. The bad: It is rather thin metal so it is a bit hot to the touch when taking it off the eggs. The eggs also leak a bit under the edges where the handle is connected - there's a slight opening instead of a seam for the square. A little leak on the side too. Most of the other egg molds on Amazon are silicone which does have benefits from a non stick perspective, but I believe their handles will also get hot to the touch, so until I find a heavier square mold this one is a keeper.
