From a Die-Hard Baker
I used to pride myself on my baked goods and for years made all my cakes and cookies from scratch - in fact, I turned up my nose at cake mixes. But now, with an 11-month old baby, cake mix cakes are all that I make! You'll find many delicious recipes in this book, and most can be whipped up and in the oven in under 30 minutes. I find it easiest and quickest to bake the cakes in a tube pan, and make a simple glaze to drizzle on top. Most also freeze well, so sometimes I'll bake a cake in two loaf pans and store one in the freezer to have available later. I probably bake several cakes a month - to give as thank-you's, to welcome new neighbors, to bring to dinners at friends', for my husband to take to work. You'll also find that once you get the hang of making these cakes, you'll come up with your own combinations. Don't be afraid to deviate from the cake mix and pudding flavors suggested in the recipes. My favorite combination, one that I use in many of the recipes, involves Duncan Hines Golden Butter Recipe and Butterscotch pudding mix. One recipe that took me by surprise was the biscotti - so easy, and so delicious! My only complaint about the book is that Anne offers helpful hints (e.g., substituting pan sizes, add-ins for cakes, loaf pan ideas) that are sprinkled rather haphazardly throughout the book. I find myself marking these pages with little stickies so that I can find them easily. These are the top ten recipes that I've had the greatest success with, received many compliments on, and that I make over and over again: 1 Kathy's Cinnamon Breakfast Cake (try the DH Golden Butter / Butterscotch pudding combo here - it's fantastic!) 2 Orange Dreamsicle Cake 3 Chocolate Praline Cake 4 Biscotti (try DH Golden Butter with mini chocolate chips) 5 Orange-Cinnamon Poppyseed Cake 6 Lemon Buttermilk Poppyseed Cake 7 Banana Cake 8 Favorite Apricot Nectar Cake (try coming up with your own flavor combinations, such as Pineapple cake mix, Orange Jello, and Guava nectar) 9 Pineapple Inside-Out Cake 10 Amaretto Cake And some recipes I didn't like so much: Triple-Decker Strawberry Cake (tasted like Crunchberry cereal) Toasted Coconut Sour Cream Cake (just okay, not impressed) Incredible Melted Ice-Cream Cake (haven't had great success finding an ice-cream flavor that works well in this recipe) Chocolate Better Than ? Cake (dry, not that good) Chocolate Pistachio Cake (flavor was strange) Double-Chocolate Chewies (didn't taste that great) Penuche Frosting (too difficult to work with, sets up too quickly) Have fun! - See more at: [...]

More than just a cookbook, a lifesaver in many ways!
I am always so busy around the holidays, trying to do crafts and make a bunch of dishes to pass for all the places I have to visit and am always aiming to make a really great dish. Usually I make everything from scratch and get extremely overwhelmed and spend a ton of money on ingredients. A guy at work recommended this book. I was leery at first because I always make things from scratch but he told me all the cakes he brings in are from this book and all of his cakes have been nothing short of amazing. So I decided to make the Holy Cow cake from this book and couldn't believe that I only needed a few ingredients and a boxed cake mix and the cake turned out so delicious, everyone raved about it at our last get together and I was told I had to make this cake every time I came. There was little preparation and little time and little mess to clean up which made baking so less stressful. I ended up ordering all of her books. This is more than just a recipe book, it also tells you about the cake mixes out on the shelves in stores and which ones are best and teaches you about so many other baking things that I never knew as well, what kind of spices are best, what kind of pans are best, so very helpful in helping me achieve the perfect cake!

A really good book with recipes for enhancing and enriching boxed cake mixes
This is a really good book with color photos that show you how all the recipes look...one thing to remember is that the recipes are all based on the "old" weights of a boxed mix, which used to be around 18 ounces. The new cake mixes have less product inside (15 oz?)--which can yield different results if you doctor them up using recipes in this book, although the companies like Pillsbury and Betty Crocker and Duncan Hines won't admit it. Instead, you can generally add the following to a box of cake mix, along with the other additions noted in this book...to "extend" the recipe so it's equivalent to an 18 oz box of cake mix: add 1 C flour (all purpose works fine), 1/2 C sugar, 1 tsp vanilla, 1 tsp baking powder, 1 egg, and 1/2 C water. The easiest way, however, would be to have a โspareโ box of the same cake mix and add 1/3 CUP of the mix from the extra box, and then store the remainder in that spare box in the freezer for the next time you make a cake. You can also google for more information. A more simple way might just be to buy TWO boxes of the 15 oz boxed cake mix, and to ONE box, add 1/3 to 3/4 Cup of product from the "extra" box, and you've now brought it up to speed and really close to the 18oz original boxed mix. I've done it both ways and it's very forgiving, and yields delicious results!

Buy this Book!!!
I borrowed the book from the library & had to have it after trying one recipe! I've given 3 books as gifts with happy results. These recipes move a mundane box mix into over-the-top desserts and home made tasting treats. My husband is well traveled and pronounced Kathy's Cinnamon Breakfast Cake pg 257, as the best coffee cake he's ever eaten. Anywhere. I've shared this recipe with several people who have tried it and agreed. The authors' down to earth way of writing makes the book an enjoyable read. She provides lists of the most portable cakes & desserts, how to exchange one pan size for another, and other helpful tips and tricks. I would recommend this book for the newly-wed, Mom's busy with kids, and anyone needing to take a dessert to a gathering. This is the list I gave my recipients, and it makes a really cute bookmark if you are so inclined. Chocolate Pistachio Cake pg 40 Chocolate Marble Gooey Butter Cake pg 244 ***Kathy's Cinnamon Breakfast Cake pg 257 Best coffee cake ever!! (glaze is better with a bit of butter) Chocolate Mocha Chewies pg 337 Nina's Strawberry Crisp pg 364 Chocolate Punch Bowl Cake pg 368 Chocolate Covered Cherry Cake pg 50
