How much 12lb mono can it hold

The C-30 will only hold about 80yds of 12lb mono. I would suggest a bigger size reel if you are going to use such thick diameter line.

I have a 9 ft ugly stik rod and i plan on doing catfishing plus saltwater, would the c-55 be good?

The C-55 is a good size. If you are using straight mono, i would suggest going to a 65 or possibly an 80 for more line capacity.

How do you tighten the collapsible handle?

I believe you just tighten up the knob on the other side of that reel
