Does it work on square head bolts?

If you're needing a bolt extractor, I assume the bolt isn't square headed anymore. I'm quite sure you can get one of these sockets to grab. I had rounded an oil drain plug and tapped an extractor on it - popped it right out.

Will they remove a strip torque screw?

It will, IF the torque screw has a head on it. This set is for any bolt WITH a head that is above the surface of what it is screwed into. I hope that helps.

Would mess up the bolt or leave it in working conditions?

This is for use when the bolt head is no longer useable or has snapped off. these are designed and sized to be used on the bolt shaft. Hope that answers your question.
