岡山県総社市内の会社が製造している、地元産の赤米を使用した真面目な塩麹です。これまで私が試した全国の塩麹の中で、ピカイチです。料理の味が総合的にワンランクアップ、奥行きが生まれて本当に美味しくなります。シンプルなのにとても奥の深い、本物の商品だと感じます。岡山県人ではありませんが、岡山県の誇り、といっても良いくらい、隠れた逸品です。本当にオススメです。
