what is the maximum volume of water this can heat?

Not sure on the absolute maximum. I use a stock pot. Mine is 12 or 16 quarts. Plenty large for whatever thing I’m cooking.

What are the minimum and maximum water depth for this sous vide. Will a container 7 1/2 inches deep accommodate it?

This heater can accommodate many different depths, because you have the choice of sitting it on the bottom of container or hanging it from the side. The minimum/max measuring from the flat bottom is 2 3/4 to 6 1/4 inches. So if you set it on the bottom of 7 1/2 pot it might be a little dicey, but no problem just hang it from the side.

what does the 9" measurement refer to?

Good question. Possibly the outer packaging, because the Sous Vide thing itself is 14.5" x 2.75" x ~ 4.5". That last is the depth from front to back -- the clamp thing makes it much deeper than wide.

What kind of container works best with this ?

We use a pot, but anything that holds water and is sturdy, resistant to hot water works.
