I never heard of a sharpener specific to each.** A: Zwilling apparently tailors this sharpener to their knives. From their website: "The angle between the blade and the steel should be approximately 15 degrees for ZWILLING knives. Santoku knives and all MIYABI and Kramer made by ZWILLING knives need to be 9-12 degrees." As is stated in the Amazon description: "One side features a 15 Degree angle for Western-style knives, the other a 10 Degree angle for Asian-style knives." Most manufacturers (Shun, Global, Wusthof, Zwilling, etc.) sharpen to an angle between 14 and 17 degrees. The Western side can probably be used successfully for these knives.
