This is too expensive with shipping for me to make Detroit-style pizza with. Is there another cheese someone can please recommend?

I'm from Detroit. Won't be exact, but you can come very close with a mixture of half white cheddar, half Monterey Jack. Crisp crust comes from spreading the cheese all the way to the edge - cheese touching the pan side during baking makes it crisp.

Are the 8oz blocks sealed in airtight packaging? Wondering if I can buy extra and keep for months unopened.
