Why is this sharpener much more expensive than similar adjustable sharpeners?

All I know is it's worth the price.

Does it work for Japanese knives?

It has a setting to accommodate Japanese knives.

Has anyone used this successfully with Global knives?

Global knives are sharpened at 10-15 degrees, so this sharpener should work.

has anyone tried this with a single bevel grafting knife?

A Necessary Kitchen Tool!

My husband is a fanatic about having sharp knives. This sharpener is his answer. You can position the sharpener for different blade types, and it puts a lasting sharpness on all of them. It did a fantastic job on my scissors. It is very light and easy to use. If instructions are followed, it is very safe to use. Except for the blades, it is made mostly of plastic. It is inexpensive but works like a very expensive sharpener. We love it!
