Question 1

How big of a Tortilla will this hold? We have 12" currently for our burritos and would like to do fried tacos

Hi Bryan:  I'm assuming you're talking about a flour tortilla.  If so, a 12" may be pushing it a little; as the taco frame is 6 1/2" wide.  You could try it, though.  You have to be quick, the flour will fry in seconds...not minutes, as the corn tortillas.   We recommend you use the small flour tortillas on the market.  Whichever tortilla you use, remember to heat slightly, as this makes the tortilla flexible and prevents cracking when folded around the frame.

Question 2

Using an air fryer do you have to turn them side to side or let stand upright. What temp do you set air fryer o?

Thank you for your question.  To answer your first concern...No.  You do not turn shell from side to side for the air fryer.  That is the technique we do use, however, when we bake in an oven.

The air fryer circulates the heat around the upright-standing shell form.

Air fryers differ in heat control settings according to make; model and size.  You may have to 
experiment a little to find your desired toasting result.

Most times, it is recommended to use the highest temperature.  However, the tricky part is "for how long".  Our kitchen uses 400 degrees for 6 minutes and 45 seconds.  The cooking manual that came with your air fryer will probably recommend time and temperature for French fries or chips.

I would suggest starting there.  If, however, you are not satisfied with the degree of crispiness, you may simply leave the shells in the fryer and set for a little longer.  What you don't want to happen is to over cook.

One other tip...try googling your question mentioning the brand and model of your air fryer.  There are blogs out there that are happy to relate their experiences.

You may have to test a few times and temperatures; but from all the reviews and comments we have received, it is well worth it to have an oil-less taco shell made with a real tortilla instead of the processed, reconstituted ones that come in a box.

Can you cook with a corn tortilla?

Yes! If the corn tortillas aren't super fresh, I warm them for a few seconds to make them more pliable. This helps prevents them from splitting when you place them in the stands. I always cook them in my air fryer, but am sure that they would cook as well in a conventional oven.

Question 4

Can this be used with chicken breasts to make 'naked chicken chalupas' at home, or would that be too thick to fit?
