If mixed with clear epoxy will the epoxy harden with the same crystal clear finish?

Sorry but No. The filler is white polyethylene and will cure white when mixed with clear resin.

How does this affect pot life/use time?

It doesn't but they type of epoxy does

Does this thickener absorb moisture? I'm worried of bubbles in the resin.

Bubbles in resin can be minimized with alcohol (sprayed over areas) or by heat (can ise a blower) just be careful, small amounts
