Does this come with the subbase that has the Off/Heat switch?

This Emerson White Rodgers 1E30N-910 Thermostat is VERY simple and comes with 3 components: (1) A wall plate that you mount with 2 screws and to which you attach the 2 control wires, (2) The thermostat base that actually holds the bimetal thermostat, and (3) A cover with a bimetal thermometer displaying the current actual ambient temperature. The thermostat base is mechanically and electrically connected to the wall mounting base with 2 machine screws, and has a lever protruding out the bottom of the unit that sets the desired temperature. I do NOT believe this model features a System OFF switch, so simply moving the setpoint down to 50 degrees is as close as you can get. I believe that the 1E50N-301 Thermostat includes the switching subbase with the Heat/Off function you desire. I'm not a pro but I've installed this unit on more than one millivolt furnace and had no problems. Unfortunately, none of these were in my own home so I can't go look at one of them for you.

Have to replace a gas fireplace thermostat. I was told there are specific wall mount thermostats for a fireplace. What type should I get?

Don't know what kinda fireplace you have, but this works great on mine. I just wired my 2 switch wires to the tstat and was good to go.

We need to replace our old one that works with our gas free standing heat stove - will this one work? looks the same but model # is one # off.

This thermostat is very simple and is basically a single-pole on/off switch for heat-only applications. It's identical to the old mercury-in-glass thermostats from the 1940's except it uses a mercury-free magnetic switch instead. It has an adjustable "anticipator" (resistor) for 24V systems but my furnace is a self-powered "millivolt" model so I set the anticipator to zero ohms and it works fine.
