Will leather still be “breathable” after applying this?

There's one for suede and then the universal which is this item and it is for smooth leather or any leather for that matter. It will not stain or hurt your leather in anyway its just going to waterproof and protect ur delicate leather goods from water stains. Yes your leather will still be breathable.

Can you use this safely on suede light gray Golden Goose sneakers?

I used it on light brown and baby blue suede shoes with no issues. It didn’t darken them use once a month if u wear a lot. If it’s a shoe with laces do a test spray on the tongue to see if it makes it any darker just in case.

Will this product properly protect white, tumbled leather sneakers?

I've used it on white leather sneakers (Veja Esplar). I didn't notice a color change. I used them on white fabric sneakers as well and didn't notice a color change either.
