OK so it’s ridiculously expensive. BUT. When chocolate is the highlight of the recipe this one is the one to go for. Try the following recipe which takes all of 5 minutes to make.1 and 1/8th cup milk heated to frothing in a microwave2 egg yolks4oz best chocolate. I used Guittard and was not pleased. Trader Joe’s was good. I’ve used Valrona which was the best even over Caullibaut. Smooth and creamy.1 oz espresso (instant could be used - Medallio Doro)1 tsp Mexican vanillaMix 2 minutes in mix master blender and refrigerate for 3-4 hours. Keep in mind that this recipe contains raw eggs.

If you’re making a chocolate truffle-like cake, or any chocolate cake where the chocolate really matters, this is the chocolate to buy. Wonderful.

Very tasty and a wonderful rich flavor. I used them for chocolate covered madeleines and they were gorgeous!However after the chocolate cookies were left out for even an hour the chocolate turned white and kind of spoiled the whole effect.

Not a first time buying this brand. Very rich taste. Now making Dubai chocolate. Love the taste.

Quality

Very expensive, yes, but when I am going to the trouble of baking something that features the chocolate( like a soufflé or flourless cake) this is what I rely upon. Likewise when making truffles or any other hand dipped chocolate candy, this always my first choice.

My chocolate arrived completely melted and unusable. I am surprised that Valrhona doesn’t take into account weather, temperature, and shipping chocolate.Very disappointed. I was going to try this brand out but because of this will go back to my other brand which always arrives unmelted.I will get this returned/ refunded.
