Does the lid have a gasket to seal in moisture? Several of the models I've looked at do not have any seal so foods can dry out if cooking all day.

Slow cooker lids do not (should not) "seal". The lids sit and fit nicely, but are not sealed. Moisture condenses on the lid and much of it drips back into the pot. Cooking in a slow cooker does not dry out food - the opposite is often true as the moisture in veggies is released into the pot. If your food is getting dried out, then you may have it on too high a setting (high versus low). My awesome beef stew cooks for 6 hours. If your "day" is 12 hours, I suggest that you buy an electric timer / switch that you can set (same as you'd use for the house lights). Hope this helps...

Does this hold 8qt? I have another 8qt that actually only holds 6.5qts of water to the very top.

What are the pluses of this manual slow cooker vs. one that has an electronic front panel? What can't I do with this manual one?

A manual slow cooker has to be turned off or set to warm by you. Some digital models will switch to warm automatically after the cooking time. Thank you.
