If I want to prevent audio coming through tab speakers, will putting one of these in trick the tablet into thinking it's sending signal to headphones?

It will if the unit mutes your speaker (it will act like a open or broken wires).

What is the threading on the pvc screw-in?

Not sure what the thread is but it threads directly onto the melal portion of the replacement plug so it seems irrelevant unless you are just using the plastic portion and not a new soldered portion which doesn't seem possible.

I want these to go with a jack (female). nine to nine 3.5mm stereo jack panel mount connectors are not deep enough. what can i use?

I don’t understand your question. What is a 9 to 9 3,5mm Jack? All 3,5mm jacks are built to a standard depth so they should all work as long as it’s a stereo Jack and not a mono (that is if you want stereo sound.
