Q: Will this work on my new iPad Pro?

Yes, it works on a 2nd Generation Ipad Pro. 2020 I attached the CF card reader to my iPad Pro 11" 2nd Generation running IOS 14.6- so one generation older than the 2021 model. I then used the Apple App FILES to open files and I could see the CF Card Reader - the card was a SanDisk Extreme Pro 128GB. I could also see a list of pictures - both RAW and JPEG - the photos were from a Canon R5. I opened a JPEG file with no issues, came right up. Of course the RAW image was not read since I have not installed any Canon RAW viewer. The FILES Apple app gives you the ability to look at the images by Icon, List or Column and to sort by Name, Date, Size, Kind and Tags. I found that the application was very snappy reading off the CF Express Card.

Q: Will this support uhs-ii at the higher speeds? (not just backward compatibility?)
