It cooks faster than I thought it would yet go's slow enough to not damage the meal, makes perfect sauces. I make a chocolate sauce from cacao, honey and water, equal parts. It cooks best on med low heat but takes a long time and must be stirred constantly as it burns easily and sticks. This turned out perfect in about half the time. So far my only complaint is the silicon tip in the blade must be paid attention to or it could be lost. Still a wonderful addition to my cookware.
