Don’t buy for Molecular Gastronomy
Sodium Alginate used for popping boba is white, this is off white. This brand doesn’t work for popping boba! Don’t purchase if that is your intent..

It's not actually the sodium alginate. They don't provide specification. Yet it can be used as gelling agent. Good for food use but useless for technical applications.
