How wide is the blade? The tile reads 1" wide but the description 7/8". Are these well suited for Persian koobideh kabob?

They are indeed 7/8" but they work excellent. I have used them many times and have had no issues at all.

Any issues with rust?

I've had the skewers for around 4 months, no issues with rust - but I live in the desert southwest.
