The missing piece was not using a stone, you can use either a traditional wet stone, or a hard surface (diamond) one. Since I didn't want the hassle of a wet stone, I opted for this one, and found it to be easy to use. The instructions tell you to try and maintain a 22.5 degree angle while sharpening, which they recommend you do by folding over a piece of paper twice, once to get a 45 deg angle and then once more, and using this from time to time to check your angle. I worked amazingly well and kept all my cooking knives razor sharp for years. Recently, it seemed that the sharpener just didn't have the grit it used to have and its ability to sharpen was greatly diminished. The easy solution was to order a new one.The new sharpener is definitely more course than my old one and, I think, more course than my old one even when it was new. It does remove metal quickly when sharpening and seems to leave a more course blade finish. That being said, I would not consider returning it. It does create a very sharp knife edge and I have started using my old sharpener as a finishing "Strop".
