This is vital wheat gluten.
This is vital wheat gluten, not 100% sure why they've called it seitan flour, I imagine its because vital wheat gluten sounds quite artifical and not something youd like to eat, however it is a perfectly natural-ish product and makes making mock meat a lot less effort than starting from regular flour the traditional way. If youre new to making seitan I would highly recommend the book Crafting Seitan by Skye Michael Conroy. Making seitan takes a tiny bit of skill and practice and its easy to make something that has a horrible gummy texture on your first attempt but if done well it is shreddy and juicy and makes a great replacement to meat thats super high in protein and healthier than both meat and the shop brought alternatives.

Excellent for my 'steaks'
Used this for 'best ever seitan steaks' online recipe - perfect. Good value with the bigger bag too. Mixed easily in my food processor and made a workable dough. Good product.

Consistent results
Had great results with a variety of flavoured seitan recipes. I cook the seitan in a steamer, cool then slice into portions before freezing until needed. Perfect! Also a great ingredient to stabilise crumbly mixtures; I've started adding a couple of tablespoons to our family favourite vegan black pudding recipe so it is easier to handle when slicing and frying. Will probably find other uses in omnivore recipes as I go on.

Seitan is fantastic
I bought this as a option to reduce our meat consumption. All three of my children are into working out or an athletics of some sort and we like to have options that are vegetarian or vegan and as their is 75 grams of protein per 100 grams of seitan it is a perfect choice. This product is fantastic in that can quickly and it does exactly what it's supposed to. If you season it well and use vegetable stocks in the making of the dough then there's a huge amounts of flavor.
