Review: Works perfectly! I am very happy with my Anova Sous Vide Cooker. - I am very impressed with the Anova Sous Vide Cooker 3.0. Meat comes out tender and juicy, especially chicken breast. I like that you can put meat in a vacuum sealed bag, then into a water bath and that's it, go about whatever else you want to do. When cooked, take it out of the water, and dry it off well with a paper towel. Give a quick sear on both sides and you are done. I have not installed the app. Personally I see no need to. The cooker is very easy to use. Fill up your container with water, attach the sous vide cooker, plug it in, press the temperature button, then the + or - button until you reach the desired temperature. Press the temp. button again to save setting. Next press the on button. Once it gets heated to the temperature you have chosen, put in your sealed bag, wait for the temperature to come back up, then set your timer, Press timer, then + or - button until you reach the desired time, then press the time button again to save your setting. Make sure the meat is completely under the water and not lying flat on the bottom. I bought the Everie Sous Vide 12 Qt. container with hinged lid, rack and container sleeve, which makes cooking even easier. I just set the bottom of the bag into the rack and drape the top of the bag over the edge of the container and close the lid. The lid holds the bag in place, and the rack keeps it from laying on the bottom of the container. If you are looking for a good sous vide cookbook, I recommend Sous Vide for Everyone by America's Test Kitchen. I bought 3 Sous Vide cookbooks, and this was much better than the others. The temperature charts are very helpful, and I think are more accurate and safer than in other cookbooks. You can also go online and find recipes on Anova's website, for free. I did buy a case to put my sous vide cooker in. The case is a sturdy case, but you have to take the clamp off the cooker and put it in a separate compartment. I have since seen cases that allow for the clamp to stay on the machine. My advice is to go with that stye case. I think it would be less wear and tear on the clamp screw. The screw is the only part of the machine that I worry about, the screw that tightens the clamp to the cooker. It doesn't appear to be very strong. They should have used a stainless-steel screw. Other than that, I am very happy with my sous vide cooker. I use it several times a week! I would recommend the Anova Sous Vide cooker. It's a very nice machine.
Review: This is a great Sous Vide - I purchased the Anova Culinary Sous Vide Precision Cooker 3.0 on the advice of my grandson who has been using his for a couple of years with great success. The unit is easy to use and stayed at the temperature I set for the entire cooking time, which was 22 hours for a very lean beef roast. The roast was perfectly cooked and incredibly tender due to the temperature and time. Temperature and time are set by tapping the plus or minus sign. If you want to set a long cook time, as I did, it can take a while to get the correct time while touching the plus sign over and over. But, if you keep your finger on it, the time increases faster. My only question involved unplugging it. Some older models need to be turned off before unplugging. With this model you only need to touch start/stop. Once it stops, it's safe to unplug. I would definitely recommend the Anova Culinary Sous Vide Precision Cooker 3.0. It's a great appliance and well worth adding to any kitchen.

**Q: Why has it stopped circulating water and water temperature goes up and down with a range of 10 to 12 degrees?**
A: Because it's broken.

**Q: Can you cook without app ? Without WiFi ?**
A: We have not used the app and have cooked many things. We really forgot or didn't realize there was an app. I knew there was an app that showed recipes, maybe that is the one. But, yes cook app and WiFi free.

**Q: Is there a maximum size larger than 50 liters for a covered insulated cooler setup with this 1000 watt sous vide cooker?**
A: The limit is determined by initial water temperature, food mass, and thermal losses.  If you are asking because you want to cook a larger volume of food than will fit into a 50 liter insulated container, then you should probably be looking for a commercial unit with a larger heater (maybe 3 to 5KW).  If you are interested because you happen to have a larger insulated cooler and want to use it to cook at modest temperatures (below 160°F), then I would run a thermal test on your cooler by filling it with 160°F water, instrumenting it with a type K thermocouple (or a few) and watch how fast the water temperature drops with no added heat.  A 1KW sous vide cooker will supply 3413 BTU/hr and 50 liters of water is approximately 53 lb and thus a 1°F temperature drop is a 53 BTU thermal loss and if the temperature drops by more than 30-35°F in the first hour, then you have too much loss to actually cook in that container since you need 500W to do the cooking while the rest of the power goes to makeup for losses.  You can scale this to whatever size container you want to test so long as you leave 500W available to heat the food after offsetting the conductive and convective losses.

**Q: What is the max temp; will it cook at 203 F?**
A: Max temp is 197.  203 is getting very close to boiling, so there's likely an issue with keeping water that hot without heating the element to a level that would cause flash steam inside the cooker.

### ⭐⭐⭐⭐⭐ No lies! The meat turns out tender!

UPDATE: Within 6 months, the head of the screw that clamps the cooker inside the holder fell apart in my hands. Part of the head of the screw remained intact so I could still use the cooker. It just made it more difficult to loosen and tighten. I contacted Anova and they had me send some information and put in an order for a replacement screw. They also sent me a shipping label to return the broken part. Within a month, I received the replacement screw. When I received it, I could see why it fell apart. The half of the head that fell apart is put together in thirds as you can see the seams. Before putting the new screw on the clamp, I did decide to add glue all over the head to hopefully keep it from falling apart again. The screw is part of the clamp, and has nothing to do with the sous vide cooker, the water, or the food itself. I appreciated Anova's customer service on the issue. I have seen a lot about sous vide, but I mainly ignored it as another fad. Recently, I saw it mentioned in my weight loss group for batch cooking chicken breasts to cut & use in recipes without drying out the chicken. I can cook moist chicken breasts in the oven, but I use a thermometer to keep it at 165. It's tedius to monitor with multiple sized breasts that we buy in bulk at Costco. I can use the pressure cooker, but it varies on how tender it comes out since breasts vary in size when batch cooking. In addition, since Covid, we've been having a lot of problems with the toughness of the beef carried at Costco, prime or choice, doesn't matter. We can pay more for better quality elsewhere, and we have done this for better results, but I'm newly retired & we're cooking for a family of 5. I prefer the Costco prices. Soooo, I ordered this cooker to see if it was as magical as everyone has said. First, the app is FREE. There are a lot of complaints about the price of the premium version of the app. The free portion is very basic. You connect to your wifi & you can set the temperature & the timer and you can start the cooker from the app. I find the app easier to use than pushing up and down buttons on the unit itself. The app allows you to just type in the numbers. My old fingers are more easily able to type buttons on my phone than messing with the unit. It's not fancy so when your timer is up, you will NOT get an alert from the app. Your cooker will let out a few beeps and stop. If needed, it would be better to use your phone timer or an oven timer instead of the app if you need to more closely monitor the cooker. I personally have zero desire to pay for the premium portion of the app which apparently provides recipes & allows you to select the recipe & it programs your cooker. How hard is it to type in numbers for temp & time? Hit Google and you will get a million options for recipes cooking your meat. Use Reddit, Facebook, etc, etc, for recipes. Anova even has suggested times and plenty of informative articles on their website for free. You don't need to pay for an app. Right now, I haven't bought anything but the cooker. We have a large, oval Le Creuset Dutch oven which works perfectly so far. We have a vacuum sealer, but I'm just using the cheaper freezer lock bags from Costco which seem to work fine. I have been clipping the bags onto the sides of the pot, but the meat seems to stay underwater without the clip. I cover the pot with a piece of foil & a dish towel. I haven't seen any evaporation yet and this may not be needed for the short cook times I've done so far. First, I made 2 chicken breasts for my lunches. I did 148 degrees at 1 hour and 30 minutes. I then seared the chicken breasts in a skillet for some added flavor. Right now, I'm batching cooking 4 breasts for my lunch, but I did presalt them & let them sit for about a half hour prior to cooking. You still need to brine your meat if that's your preference. I won't be searing the chicken & I will just shred it & portion it for chicken sandwiches for my lunches this week. For my second attempt, I had my husband buy the cheaper top sirloin steaks from Costco. He salted them & let them sit overnight. I added Montreal Steak Seasoning & plopped them in bags for about 3:10 at 132 degrees. Hint... If you start with hot water out of your tap, it takes less time for the cooker to get your water to temperature. My husband seared the beef in a cast iron skillet with butter & they turned out so tender. Next time, I'll probably drop the temp to 130 to get it a bit more medium rare. I included a picture, but I didn't slice the meat for staging as I was anxious to eat. If you're looking for fool-proof tender meat, sous vide is the way to go.
