Q: Is this the same as the Mexican Masa Harina?

Hello Rock Guitarist's WifeThe main difference is that the Iwisa is made in South Africa from white maize (mielies in local lingo) whilst Masa Harina is made from yellow maize. Both are gluten free if that is one of your concerns.The primary uses of the Iwisa are to make porridge, and stiffer dough form called iPhutu in Zulu and sadsa in Zimbabwe. Also a supplement to add to mielie bread which is made from minced and a couple of whole kernels of white maize which is then steamed.It seems that you know Masa Harina, but a quick recap - used in tortillas, tamales, pupusas, arepassopes, gorditas and other antojitos/ snacks. Hi there yes you can make it a a porridge or as a traditional SA Pap For porridge I usually use sugar and for a perfect PAP I use salt as well as butter just to smoothing it a lot better..
