Has this corn undergone Nixtamalization? I want real hominy!

Yes it has. I have taken a photo of the back of the product and have attached it to my review.

Do you have to soak the dry hominey? If so overnight?

I rinsed it thoroughly, then left it to soak in clean cold water overnight, then rinsed it again, then cooked it in fresh water (bring to the boil then lower to a simmer, add stock or herbs here if you like) for 2 hours until it was tender. It might take up to three hours depending on your stove.

Can I use this to make true, Southern American grits?

I would say no. I think Grits are usually ground hominy, as with Italian polenta, so the grits are like coarse sand in texture before you cook them. This is whole pieces of dried corn, but with the corn cracked into pieces to make it easier to cook.

Is overnight soaking enough or donI have to male nixtamal with lime?

Just soak it overnight following the instructions on the packet. Drain and rinse the next day before cooking.

Good for making pozole

Totally in love with this product, I am Mexican and I love pozole and this is a very good substitute of maiz small pieces but the same flavour I highly recommend it definitely I will get it again in a bigger pack.

Good product.

The product is fine. Unfortunately, it was delivered late. Not the sellers fault, but EVRI, who in my experience have never delivered as promised. Fortunately they don't do pharmacy deliveries, otherwise, there would be fatalities

Finally, nixtamalized white corn!

I have been craving a Filipino 'street food' dish called 'binatog' of which the main ingredient is hominy corn! I have been looking and looking so that I can make some whenever the craving strikes but didn't want a 800g odd can of it... I have seen this about but the reviews have never mentioned whether or not it has gone through the nixtamalization process which gives hominy that texture I love when eating binatog! Took the risk and according to the back of the packet IT HAS!! Yay (: Attached: photo of the back of the product, prior to cooking, cooked and as binatog (simply mixed with grated coconut and sugar or condensed milk). Yet to try presoaking before cooking as I was too excited 🤭 Delivery was great, arrived the next day. Price is a bit steep for how much you get but great if you just want to try it out before getting the 2kg pack that they do which I think I'll get next time as it is more economical!
