Wyeast Activator 1388 - Belgian Strong Ale

I used wyeast 1388 to brew a belgian dubbel style.I did use a 1 gallon starter to make sure it was healthy before pitching to such a high gravity wort.I also added some fresh yeast of another type at bottling time.It came out fantastic.

Ferments like a boss

Worked great but took me forever to finally break open the internal pack to activate. Beat the living crap out of it before it finally worked!

Did not activate!!!!

Just what the brewer called for.

Really wonderful yeast. Very similar to the Duvel yeast. I did a side by side with a Jamil Duvel clone and the real thing. You get 98% of the way there with this yeast. It has a brisk pear / apple note, some phenolics, and ferments quite dry. I used 15% simple sugar and found the AA was somewhere around 85%. It's a rather dusty yeast, so plan on extended cold chilling time (I did two weeks at 29F), or use gelatin to clear.
