I was looking for an egg replacement as a binding agent for a a vegan recipe I am working through to make stuffed peppers with a lentil filling in place of meat. I knew that Bob's Red Mill was top quality so I was delighted that this product worked perfectly.

Still able to bake
The product does exactly what it says is will. I'm using it for a baking replacement since the price of eggs is so high and it is very simple to use. It does change the texture and taste slightly but nothing we can't live with. It might not even change the taste but it is different than using eggs. It is shelf stable which gives it another pro.

Awful
This product is bad. I was looking for a substitute for currently scarce liquid egg substitute and found this online. You have to mix it really fast otherwise it becomes unmixable. Like the liquid I mix it with egg and drop in some shredded cheese. The color is a little off, I can deal with that but the texture when cooked gets really weird. I will use it because I bought it and I don' like wasting food.Also wasn't expecting this because every liquid sub I have ever used has been very low in carbs, but this stuff is 8 carbs, another dealkiller. Never again.

Best egg replacer
This stuff is a life saver for my toddler with an egg allergy! You cannot tell a difference in taste when you use it the way it’s intended (in cakes, pancakes, etc). Great value for money, the texture is perfect when you whisk it and doesn’t have an overpowering smell.

Excellent egg replacer
I'm allergic to eggs and went without deserts for ages until I found this product. It doesn't work for scrambling or similar uses, but it excellent in baked goods. Family and friends who still can eat eggs have never noticed a different taste to products made with eggs versus this egg replacer. This is a replacement purchase for a used up previous product.Unlike using ground flax seeds, you do not have the dark specks in your dough/finished product. It keeps the dough together. Be aware that you need to mix it with water and set aside for 3-5 minutes before adding to your dough. I've had better luck adding the egg replacer to a container and then adding the water (less lumps this way). Make sure you don't use too hot water, tap warm is plenty.

Good for vegan or just to bake with and save your eggs!!
Quick and easy for vegan baking you don't notice the difference. Plus with the fluctuation in cost of eggs this is a great shelf stable replacement, no need to make a $100 cake right?
