Great product
This rice flour is perfect to sprinkle down when you’re working with dough. It doesn’t absorb like regular flour so you don’t have to worry about your dough taking him more flour than it needs. It also does not take a whole lot.

Used For Dusting Sourdough Banneton Liners - Works BEST - Highly Recommended
I just used this rice flour as dusting powder for my homemade breads. I make sourdough and used it to dust the banneton liners and the loaf's top per-proofing. I am very pleased with the results. It's not sticky, adds no flavor and does a better job than wheat flour due to the lack of gluten. Since there is no gluten, no bonds are made with the liners and the loaf flows out of the proofing pan like butter. A must have, in my opinion. Also, my two bags have expiration dates that are two years out.

A little different than what I’m used to
When I was a kid my Filipino grandpa shared a recipe for rice cake which uses sweet rice flour. He said there was only one kind to use don’t bother with the rest and the recipe came out great every single time. I couldn’t get a hold of the particular sweet rice flower so I went with this Brand instead. The texture of this flower is very fine, but the feel reminds me of cornstarch rather than the sweet rice flour I used to use. The finished baked product has a starchy texture to it rather than smooth and the flavor is not a satisfying rice flavor, this reminds me of cornstarch pudding. I’ll try to make a few more things with it, perhaps a thickener for gravy next. I appreciate their packaging it into a poly bag which helped to keep them intact with no bag rips, still need to be careful what is ordered with it so it doesn’t tear it apart. Oh, and the price for a pack of three was a good deal.

Mochi Icecream
made some really good mochi ice cream using this flour! while making it, it has a mild sour smell but after freezing, the smell went away. it’s also two bags for a really great price. I’ll now be eating excessive amounts of mochi.

I use this in a shaker when I make sourdough bread. I shake it in my banneton baskets before I add the dough. It works great!

Great for dusting the top of sourdough loaves
I'm so glad Amazon has products like this since it was not available in my local grocery. Rice flour is used on the top of sourdough bread before baking so you can see where you cut. You cut into the top of the loaf to make a place for the loaf to spread as it bakes and it doesn't get misshapen from the fermentation gasses. Slicing into the top allows the excess gas to escape. The rice flour gives a white background so a decorative pattern from the slices show. Some experienced bakers make beautiful patterns. Since the rice flour does not have gluten it doesn't get sticky and stays white. I haven't noticed if it has any flavor but you only sprinkle a thin layer of rice flour on the bread.
