Looks like the product height is too high by two inches, based on the dimensions for the 2, 4 & 8 qt containers. Can anyone verify?

I purchased the 2Qt Height 2 & 5/8" . Not counting the handles, the top outside is 8 & 3/8" x 8 & 7/8" . Include the handles and it's about a 9"x9"

Would this be good for storing rice (15 lbs)? I'm looking for something air tight and my last container had weavils.

probably not the lid needs to be super tight to keep vermin out of the container. Also most grains and related foods have some residual eggs in the grains. The best way to prevent weevil infestation is to freeze the rice for 24 to 48 hours which will kill any vermin that may be in the food This can be done in whatever bags or boxes the food was packed in. my wife and I have done this for years - storing the grains and flours in 5 gallon buckets with very tight snap on lids or even better Gamma lids and as long as you keep them sealed you shouldn't have any problems

Does this off-gas a plastic odor when using to cook sous vide? I'm very sensitive to chemical odors.

If you're cooking Sous Vide, you shouldn't be as concerned with chemical odors of your water vessel, as you should be with the plastic bag material that your food is in. This question seems to miss the whole idea of the cooking method.
