Works well but has an irritating flaw
I had my eyes on a Zojirushi bread maker for a while but the novel coronavirus situation has made it next to impossible to buy bread makers at all, so I settled for this one. It's hard to find information about it because the manufacturer, like many Chinese manufacturers, appears to rebrand its products without actually changing them somewhat regularly. All the pages I did find seemed suspiciously like they were created by or on behalf of the manufacturer.Anyway, that notwithstanding, besides some difficulty with sinking loaves (which I don't think the bread machine can be blamed for) I did find this made a nice 500g loaf with a satisfying crust. The timer feature is pretty standard on bread machines, but setting it, forgetting it, and waking up to freshly baked bread is truly wonderful. The machine itself, circuity aside, is fairly simple: there's a bread pan with paddle that goes on the inside (with a ceramic coating that makes washing relatively painless, and a heating coil that goes around it.The machine comes with a number of presets, corresponding to recipes given in the booklet, as well as allowing manual programming if you have your own recipe. I appreciated that the recipes used weights for flour because it's not only more accurate, but also easier if you have a scale (if not there are conversions into cups in the booklet too). Within the same preset you can indicate if you're making a loaf 500g, 750g, or 1kg, and how dark you want the crust. This all seems to work fine (although I didn't find the dark crust super dark, if that is a concern). However, I do have one big user experience gripe about this machine. The start/stop button is, confusingly, labeled with a power button symbol (there's no actual way to turn it off fully without unplugging it). That's not _too_ big a deal, but it's also a capacitive button on the face that is easily activated if you brush it with your arm, hand, etc. It will not check that the pan is in place or the lid is closed before it starts kneading. This can be a real annoyance -- if you're setting a long timer, you want to leave the yeast on top, dry, but you can easily start the machine kneading with your elbow as you try to get everything set up and mix it all together. This isn't an insurmountable flaw and I am sure I can work around it in the future, but this is not a budget unit and for the price it would be nice if it were resolved.

Outstanding product
This bread machine is outstanding!! I have always made homemade bread by hand, but as I am aging I do not have the strength I used to. I purchased this product 3 weeks ago and have made 3 loaves of bread on medium settings for full cycles. The bread came out perfect. I have also made 2 loaves of sourdough, one with caraway seeds and the other with herbs, (both of which I added the seeds and herbs in with the ingredients). Also made cinnamon rolls, and french bread on the mix/ferment cycles. As with any baking, temperature of the ingredients is very important. I heat the liquid to 110 degrees, pour it into the machine bowl then sprinkle the yeast on top. The hidden gem of this machine is the ability to use the cycles, then remove the dough, shape it how you want and allow allow it to rise for final proofing. I baked the sourdough in cast iron and the cinnamon rolls and french bread on baking sheets. Some reviews say the settings are confusing, I however found them very easy to follow. The measuring cup has different increments, but I always weigh my ingredients to get the best results depending on the type of flour I am using. I have not used it for gluten free yet. I highly recommend this product.

Best Bread Maker I've Used!
I love this bread maker. I've used a few other brands, and the paddle ALWAYS came off in the bread. Not with the KBS! It's super easy to clean, and I appreciate the 2 lb loaf size. I've adjusted the salt in several of the recipes, adding a little more, especially in the French bread recipe. The sour dough recipe was lacking, and didn't have the stronger taste of a regular sour dough. I'm planning to experiment a bit with that. Adding raisins in the included dispenser is helpful, but doesn't give us nearly enough raisins for our bread. I do add them in the dispenser anyway, making sure not to pack it down too tightly and add more as it's mixing it up. Everything else is very good. I suggest purchasing a digital kitchen scale with various measurements and one that you can zero out on. This has been a huge time saver as all the measurements are in metric. I can pour my ml of water in the pan while it's resting on the scale, add the other ingredients by tsp and Tbsps, then zero it out and add my mg of flour. No measuring cups needed. The design of the pan gives the loaf a little more rectangular shape like a regular loaf.
