Rye breads range from light and airy like our American White Rye to dark and dense like our Black Russian Pumpernickel. For this rye, we wanted a hearty, flavorful rye bread not too strong but with substance for sandwiches or with a meal. This Deli-Style Rye Bread is a medium rye bread. It is made with a full-bodied rye flour but tempered with a quality, high-gluten bread flour. We added a touch of molasses, malted barley, and buttermilk to give it a nice, robust flavor but went easy on the caraway seeds.
