**Q: Has this been processed with lime?**
A: The corn used in posole like all corn used in tortillas and other corn-based dishes in Mexico has been treated with "cal" which is known by its chemical name of calcium hydroxide.  In English it is commonly known as lime.  The corn is cooked in a 1.5% water solution of calcium hydroxide until it is tender (the same as hominy).  This causes the kernel to swell at the same time its pellicle (covering that gets between one's teeth many times when eating popcorn) gets dissolved in the alkaline solution.)  The kernels may then be used or dried and saved until needed as are the blue corn kernels under discussion.  The kernels used for posole are the very large ones that are called in Mexican Spanish "cacahuazintle" meaning more or less "big like peanuts." If your Spanish is good, the same information is provided below.  It says that corn used for posole are always "escaldado" or treated with lime.  El maíz que uso ya viene escaldado en bolsas de 1 Kg. lo compro en el supermercado. Esto es que ya ha sido procesado con cal. Lleva granos de maíz cacahuazintle, especial para hacer el pozole.

**Q: How much hominy does this produce after soaking amd cooking? Like how many "cans worth" is in this 12oz bag?**
A: I would say it doubles in volume once soaked and cooked.  Make sure you soak overnight and cook for the full 2 hours with ample water or broth.

The blue posole has a chewier quality than the white posole....  I like both, but be aware that the blue has a denser texture.

**Q: Is this genetically modified?**
A: Blue corn is not genetically modified. It is a native corn.

**Q: I have never worked with this before. Can I boil them in a pot of water for about 20 minutes drain and serve?**
A: Hmm...  A traditional recipe would call for extended (e.g., overnight) soaking followed by 1+ hours of cooking.  Having done this process myself with this product, I doubt boiling in a pot of water for 20 minutes would suffice.  Also, plain boiled posole would (IMO) be very unappetizing.  Recommend trying a traditional New Mexican or other posole recipe - it takes some time/ingredients, but overall is straightforward and very much worth it.

    This Blue Corn for Posole  Makes Me Feel as if I am in Santa Fe each time I Make It!

This takes time to make because one has to soak it overnight in a large stewpot, like dry beans and peas. Then, when you are ready to start actually making your Posole the next day, you rinse the blue corn and dump the water it has sat in overnight.  Then you add fresh clean water back over the posole to cover it and a little extra.  Put it in you stewpot on high until it comes to a boil and reduce heat, then cook for 1 hour.  Remove the posole again and dump the water again after that.  An easy way to do this is put a large colander in your stewpot, put in Posole corn and fill it up with cool water. Then, the next day you simply remove the colander containing the Posole from the pot and rinse it well.  Dump water, put the colander containing the corn back in the pot, add water and cook as described above for 60 minutes and again remove the colander filled with the posole, rinse it off, and dump the water from the pot, then pour the corn back into the pot itself, add water and whatever spices and other ingredients such as ham, boneless chicken or pork stew meat (this is the traditional way Posole is made) chopped onion, garlic, Roi-Tel type tomatoes and green chillis, add salt to taste or omit if you are on a low-salt diet, plus other spices as well-crushed chili peppers to your taste or heat tolerance!  Bring all to a boil and then lower heat and cook for several hours at least to get all of the flavors melded together well.  It makes a very satisfying meal.  I love it!

I ordered these in mid-November.  They arrived quickly and in perfect condition.  It can be difficult to acquire ingredients like these in Minnesota but I wanted to make turkey posole after Thanksgiving for my husband who adores the types of food he ate while living in NM.  I did not use the recipe provided on the back, however I did follow the general overnight soaking directions and subsequent boiling directions and simply added them to my recipe.My husband loved the flavor and texture.  The texture was perfect and it was much, much better than canned.  I feel is important to note if you are hesitant to buy them online the Best By date was 4/24/2022.

A little expensive, but I was craving hominey during the pandemic and walmart doesnt ship canned hominey so I ordered this. Cooked it in my instant pot for 40 minutes (after presoaking 10 hours). Came out great, was a little more chewy than the canned version but it was good.
