Buckwheat flour must be freshly milled
For traditional Gallettes Bretonnes, the batter must be made with freshly milled buckwheat beaten till it gets a sheen. Unfortunately, a product ground ahead and from a shelf doesn't hold together as well and doesn't get the same result, regardless of origin. For recipes calling for some flour (not traditional buckwheat, salt and water) the additional gluten can help out but the result is different.

Finally after 20 years in the States, my mom does not have to ship the flour from France anymore and pay an outrageous amount for shipping. By far, my family's favorite meal!
