This cheese is totally addicting.

I am disappointed with the small cheese wedges of cheese. There is so much lost when you cut them up. The large wedge is so much better. When you are paying top dollar for cheese and most of it is wax rind, it's disappointing. Also, in no time the small wedges develped a brownish tinge on the outside.

1) Cypress Grove Humboldt Fog does NOT have a wax rind whatsoever2) Not sure what the "little wedges" that you claim to have lost so much—compared to the entire disc of cheese—actually means. In the 15+ years of purchasing this exact cheese—my favorite—I've never noticed any difference in flavor between a smaller portion cut from the larger discs, and the flavor when eating a smaller portion. This claim makes absolutely no sense at all. Is it possible you wrote this review in the wrong location?Cheese is a living thing. Color change occurs naturally due to oxygen and humidity, over time the flavors and appearance can change as it ages. I suggest you do some research on proper cheese storage and serving cheese, in order to better enjoy your experience.
