Very sharp
Lost my old one to Rome Coliseum security a couple of months ago, by forgetting it at the bottom of my backpack...After a long search I found this online and liked the look of it.ordered it and received it yesterday.Solidly built, nice wooden handle, all in all a nice feel.Although it was very sharp to start off with, as an ex chef, I gave a pass or three on the old "steel" after whetstoning... and it is like a razor blade now..
