can this be used for grown fancy rats?

Yes!!! As a former breeder of rats, this cage would be perfect for them!! The space is great and there's no possible way for them to bite thru the steel bars.

how tall is the cage only?

For the single unit, the cage's dimensions (without the stand) are 36"L x 24"W x 24 1/2"H

So the large trays are solid? There are no wire floor above it? I'm asking because the cage we have now has a wire floor with a pull-out tray beneath.

The tray sits on medal bars. If the animal poops on the tray the animal sits in poop. I use litter boxes and it works great. Love this cage.

can you take the single unit and add it on to the double unit?

Yes. I just did this. You remove the top of the upper unit of the double. The bottom grating of the single becomes the top of the double and bottom of the additional single. The new single will have a top of its own and that seals off the third unit. It isn't necessary to have the large opening between the top and mid section. You can, but you don't have to.
