Does this leave a plastic taste after time?

No, no plastic taste (it's not even made of plastic). We have had ours for 8 months and use it in a Suvee (warm bath). We like it so much, we got a second Stasher Silicon food bag.

How much more does this weigh than a plastic bag of the same size? Looking to use for bulk spices.

It weighs probably 2 oz. more than Plastic but is measurably better for storing things hope this helps you with your question.
