This species of cinnamon, which is not at all easy to find in regular shops, is the one that contains far more of the beneficial components (like chromium, which helps with blood glucose balance) and far less of the coumadin that can be potentially toxic in high levels. It's less "spicy" than regular cinnamon (which is cassia cinnamon, also called Saigon cinnamon or Vietnamese cinnamon); it has a softer, subtler version of that classic cinnamon flavour and goes so well with the typical chai spices (ginger, cardamom, cloves, black pepper, coriander powder) without overpowering them. This 500 gram package is a lot of cinnamon (!) but not too much (for me at least, as one person, a whole kilo while cheaper would have been too much to stay fresh); if you're using a spoonful or so per day in a shake or hot drink, and a bit more on veggies or protein here and there, it actually goes down surprisingly quickly. And you can use quite a lot without having to worry about the coumadin, and (as already mentioned), the taste is subtly warming and not overpowering. Really happy with this purchase and grateful that it's readily available like this while so hard to find on the high street.

Like that the Ceylon cinnamon is better quality to the usual one. Found it to be so fine that it doesn't dissolve, or when added directly, it clumps up and have to use spoon to crush the clumps. Apart from this it has a distinct soft aroma and I didn't notice it to be very strong in flavour - but it is the quality type of cinnamon.
